Tea
Most of us reading this page are Americans and we have a little problem with tea. We threw that tea overboard in the Boston harbour over 200 years years ago and ever since we've had a hard time with the stuff. Now may be the time for us to take another look at tea because alot of us who are looking at this page are into kombucha tea and tea is a good part of doing this kombucha thing. Want the best k-tea... start with the best tea... know the ins and outs... Lets get into it.
Let me start by telling you that there is tea and then there is tea. If you gather some peppermint leafs from the garden and infuse it with hot water to make a delicious hot drink that is tea; but, that is not real tea, real tea come from the "Camellia Sinensis" plant. Real teas have distinct flavors, characteristics and unique bodies. Most people find them to be delicious, energizing and invigorating plus there are many documented studies showing the health benefits of real tea. Real tea from the real tea plant is very popular all over the world; but, here in the USA we are a little in the dark about real tea. Real tea does not grow in a perforated paper bag....

Real rea is another world from what you are used to. As Americans we are used to conventionally finely cut tea which is often bland and flat tasting... this is what we are used to. Real tea has a quality and a freshness that you will notice in the flavor, taste and aroma. It has a depth to it that you have never experienced if you have only had commercial tea. Commercial tea for Americans is that tea which is a tea cut material usually recovered after processing finer quality tea and routinely placed indiscriminately into tea bags for the American market. Well; picture this,... the colors of brewed tea will vary from a clear mahagony, a bright amber liquer, a smooth bright yellow creme, and all kinds dreamy reds and all shades in betweens and the aromas! ..... The aromas.... The flavors! You have to go into them yourselves as I could just write pages.... Tea is much like wine in this respect... The subtle qualities of tea laying gently on the palate while delivering different attributes of flavor as different blended musical notes might deliver the fine full range of mellow or crisp beautiful music to your auditory senses.
